I wanted to make something different. I wanted oatmeal and banana and chocolate, so why the hell not?
- 2 eggs
- 1 cup banana (one big ass Californian banana)
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 stick of softened butter
- 4 tsp vanilla (more if you’re me)
- 3 cups old-fashioned whole rolled oats
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt, more or less
- 1 teaspoon cinnamon
- 2 cups chocolate chips
Mix the wet (everything through the vanilla) until mostly creamy. Then add the rest. Since you’re using banana and eggs, this is a super wet mix and it has to be cold to bake. The dough should look a bit lumpy and kinda sticky.
In order to let them cool, put some baking paper down and scoop out 12 cookies with a quarter cup measure. I did one half of the batch like that, and the other half in a well greased muffin tin. They both went into the fridge to cool for three hours. Yeah, three.
Once they’re cold, kick up the oven to 350 and bake ’em for at least 10 minutes. If you want them doughy and soft, no more than 12. If you like them crispy, closer to 15. Keep an eye on them, since they’re prone to burn and burn is bad.
