I wanted to make a ‘salad’ type thing, but with more heft than salad. I like salads, don’t get me wrong, but they boor me. I found the photo of ‘Tomato Party,’ checked that I had enough tomatoes and couscous, and off I went.
I used all wheat couscous, which I toasted in a pan first with a little oil. I started the kettle (I have a Cuisinart) as I started the couscous, and by the time it had boiled, the couscous was toasted. At that point, it’s time to take the couscous off the heat, pour in the water, toss the lid on, and walk about. It takes about 8 minutes for a cup of couscous to cook right, and more for more.
The use of brown sugar surprised me, but it really works well with the balsamic vinegar.
