Better than potatoes, it’s tomatoes.
This one is 100% vegetarian. The filling is panko, capers, mint, parsley, oregano, and of course salt and pepper. You’re supposed to put in olives, but I don’t like them that much and we were out. Probably because I don’t like them. The tomatoes split while being scooped, sadly. One did not, but in a weird way I liked how it opened up.
We put some cheese on ours. Cotija is a Mexican cheese that we jokingly call Mexican Feta. It would also work well with salmon or some meaty fish. Or meat I suppose. But we’re inching our way to vegetarian.
I’m starting to see why people like melon ballers but I just can’t bring myself to do them.
