Salmon and Potatoes

Baked salmon. Roasted potatoes. It’s stupid simple.

I like to pan-cook my salmon most of the time, but this has it’s moments too (and the cast iron gets less tetchy).

The salmon is doctored with sesame oil, dried lime grounds (run them in a coffee grinder), ginger, salt, and pepper. Bake until cooked (about 20 min). I didn’t measure anything so I can’t tell you anything exact. Sorry. I just know I like a lot of ginger and limes, but I went light on the oil.

The potatoes are tossed with olive oil, turmeric, chile flakes, salt, and pepper. I put them in a pan below the salmon. Bake as long as the salmon, check them when you take the salmon out, and cook longer until they’re crispy and nommy. Mine were done about the same time.

I also cooked an onion for flavor, and served it with some of the salad from earlier.
