Salmon, Mushrooms, Cauliflower, Couscous

Salmon. Baked it simple.

Cauliflower. Tossed it with tumeric, salt, pepper, oil, and baked at 425 for about an hour.

Mushrooms. Sliced them thin and tossed them in to the pan with salt, pepper, and oil. I put the heat on medium for about 10 minutes to crisp them a little, then I dropped it to super low for a long time to sweat those suckers good. Once they were mostly cooked, I cranked the heat back up and seared them a little. I love a good sear.

Couscous. This is the big, pearl, Israeli stuff. Love it. But. You have to cook it before you cook it. Ignore the directions on the bag. Dump it in a pot with some oil and salt and toast it. Once it’s browned, add in your boiling water and stir. I threw in a bay leaf. Put a lid on it, take it off the heat, and leave it the hell alone for 30 minutes or until done. If you want it sweeter, add onions and raisins. Yes. Raisins.
