Mushroom Ragout

I had no idea what I was cooking.

Dried mushrooms, fresh mushrooms, a quick stock, and truffle oil? Hah! Also I didn’t ha bread crumbs and I’d never poached an egg. I got the wife to poach the egg while I cooked the mushrooms and then the onion and then made a kind of stock type liquid to cook it all in again. Hey, it worked.

It was definitely good food.

The egg is supposed to be a duck egg, but that’s hard to find. It’s a little chewy but very tasty.
