You can’t have bulgar wheat on Passover, so my wife made taboulleh with quinoa!

It’s simple. Quinoa, fresh herbs (mint, dill, and parsley), tomatoes, the juice of two lemons, some salt, and olive oil. You can use cucumbers too, Persian are best, but we were out.

The fish is salt, pepper, and garlic.

The fork is my special Passover silverware. From the old country.
