I love potatoes. I love them soooo much.
These are Yukon Gold potatoes stuffed with leftover meatball mix, cooked in a cast iron pan with a homemade tomato sauce. I’d never made tomato sauce before. Then I realized I had all the ingredients and I was willing to try it.
After I was done, I put it in a serving tray and immediately cleaned the cast iron. You can cook tomatoes in cast iron, but I beg you to please clean it as soon as fucking possible. Any well seasoned pan can withstand the acid, but I don’t like to risk it. That said, I almost always clean my pans while they’re still boiling hot. Empty them out, run water through them, wipe them out with a paper towel.
If you have a new Lodge pan, please don’t try this. Wait till the pan is well seasoned.
